Hey everyone, just a quick post to check me out on Food Wishes, making a fabulous dish with John Mitzewich: butternut squash pancakes. The best part? It’s a video! John is famous for his fabulous visual tutorials, so I know you’ll find his post funny and easy to follow.
I’ll be posting my own version of the video soon. Hopefully. Life has taken an unfortunate hairpin turn lately, so I might be a little slower in posting over the next few weeks. It doesn’t mean I love you any less.

Loved this video. So cool to do a culinary duet so to speak. I’m making butternut squash pancakes as soon as I can get my hands on some of those harder-to-find ingredients.

You are so cute and soon to be a star! No doubt about it. =) Love the idea of squash pancakes. And lucky for me, I’ve been getting all kinds of squash in my CSA box recently. Oooh, and I have a stashed bottle of pure, organic Vermont maple syrup. I feel a pancake attack coming on.

I’ve never tried butternut squash pancakes but I sure want them on my plate right now, especially that I haven’t eaten breakfast yet today.

I have never tried or seen any butternut squash cakes until now and they look delicious. I’m anxious to give these a try, but first I need to find a store in my area that sells flour made from fava and garbanzo beans. Thanks for the cooking lesson.

Oh my gosh, these sound AMAZING! I am definitely making these over the holidays. Hmmmm, maybe a good recipe for New Year’s Day breakfast!
